{Recipes: Fish is the Dish}

There are three recipes using fish that I make regularly for the kids, and I thought I'd share them with you here. They're really simple and very quick.

Parsley & Tomato Fillets of Fish

Spread some tomato sauce (I had basil & tomato pasta sauce in the kitchen cupboard!) onto your fillets of fish on some tin foil. Sprinkle with a touch of salt, pepper and parsley. Fling in the oven for 12-15 minutes and serve with vegetables. I try to always have those steam bags of veg in the freezer... super quick & they taste alright.


Fish Cakes

Poach some fish fillets in the microwave in milk (takes like 2-3 min!). Drain and then flake the fish. Mix with some cooked peas and mashed potatoes. Sprinkle with breadcrumbs (I have some ready-to-use breadcrumbs from Sainsbury's in my store cupboard) and fry for a few minutes on either side to brown. Serve with baked beans and veg



Tuna Pasta

Cook some pasta, toss through a cheese sauce (sometimes I make from scratch, other times I buy ready made!) and fling in a tin of drained tuna. You can also add some peas and sweetcorn if you so wish. Serve with garlic bread.

Easy!!

{Meal Planning Monday}


Meal Planning Monday

After a fairly horrendous week last week of tummy bugs and general not eating-ness, I'm back onto the weekly meal planning with Mrs M.

My dad & his wife arrive back tomorrow from the Middle East... this is a permanent move back to Scotland. Yippee!! I'm so delighted to have them back. They were in Trinidad for a few years, followed by a few more years in Oman... and it's felt like forever!! They're going to be staying with me until Friday, so I'll probably not plan too much in terms of meals as I'll see if there's anything they'd fancy.

I didn't do fantastically with the Fish is the Dish Healthy Happy Hearts challenge last week as I was ill and didn't eat much more than a few crackers, but I'm back on it this week.


I'm trying to improve my diet in general, not just increase my intake of fish. It was getting ridiculous the amount of cakes and chocolate that I was consuming! To get me back into good habits I am keeping a food diary. Don't get me wrong, I will still eat cake... just not as much!!

Monday (just me) - smoked salmon, scrambled egg and Food Doctor pitta bread

Tuesday - might get some take out with my dad & Jo... fish and chips perhaps as this is something I know they have missed!


Wednesday - omelette & salad

Thursday - smoked mackerel pate for the grown-ups maybe (I've still not made this despite it being on my plan for a number of weeks now!!) and fish with vegetables for the little ones

Friday - decorate your own pizza

Saturday - pasta bolognese

Sunday (just me) - something from the freezer

{Sunday Roundup}

It's been a fairly quiet week. I ended up with the same bug that the littlest had (either that or a bit of a Crohn's flare) and was off work for a day whilst I rested. It's only now that I'm eating normally again as I felt rather nauseous even looking at food... not like me!

The tumble dryer broke, but a new one is winging it's way to me right now. So at least that's something that I can cross off my list! Was not good timing as I had a tonne of vomitus sheets to clean :-/

We visited a friend in Edinburgh for lunch this week and my son has been absolutely brilliant with the toilet training. No mistakes on Thurs, Fri, Sat or this morning before the kids went to their dad's house. We've managed to go out and about, do a long trip in the car etc and he's been a super star! Major proud mummy here!!

My son, or 'batman' as he wanted to be referred to, having a wander around Kelvingrove yesterday. Yes, he did save the girl (Barbie) but she seems to have lost her clothes in the process!!

I didn't do Mrs M's meal planning Monday, as I just couldn't face writing about food but I did have some fish for the Fish is the Dish Healthy Happy Hearts campaign - read more about the challenge here

{Meal Planning Monday}


I stuck to last week's meal plan to the letter! Go me!!

We're excited to be joining in with Fish is the Dish and taking part in the healthy happy hearts campaign - two portions of fish a week for 6 weeks. I'm going to do a separate post on this, but my meal plans are going to now incorporate more fish as it's definitely something that we don't do.


This weekend I'm going up to Aberdeen to visit family. I'll only have the kids for two nights mid-week - I'm going to miss them a lot, but on the other hand I'm also looking forward to a holiday

Monday (just me) - greek salad

Tuesday (just me) - spicy plaice & vegetables

Wednesday - ham & cheese muffins with baked beans

Thursday - salmon fillet & vegetables

Friday (just me) - @the_grey_house is catering!

Saturday (just me) - eating out
