{Project #RecipeSwap - White Chocolate Tiramisu}

Crysta over at A Hat Full of Wool sent me her recipe for White Chocolate & Cocoa Tiramisu as part of The Mrs Makes #RecipeSwap.

There was even a Green & Black's white chocolate bar included (thank you!)... which I demolished prior to even thinking about making the tiramisu... whoops!


The next day I hit the shops to collect all the necessary ingredients (& more white chocolate!) and that evening I assembled the dessert. I cannot stress how easy it was to make - so simple and very quick! I took the tiramisu into my work and my colleagues & I demolished it in minutes!! All really enjoyed it and there have been lots of requests for the recipe.

So, without further ado, here it is:

{Ingredients}

1 mug brewed cocoa
60 g caster sugar
1 packet of sponge fingers
250 g mascarpone cheese
300 mL double cream
100 g white chocolate
2 tbsp milk
30 mL creme de cacoa (I couldn't find this at my supermarket, so used espresso amaretto instead)

{Method}

Layer the sponge fingers in a deep glass dish (Crysta says it works with 1 or 2 layers, so I did 2).

Pour enough of the brewed cocoa to soak the fingers.

Melt the white chocolate with the milk in a dish over a saucepan of simmering water.

Whip the cream until it forms stiff peaks (I used an electric hand whisk). Mix in the caster sugar, white chocolate & milk mixture, mascarpone and creme de cacoa.

Cover the sponge fingers in the mascarpone mixture and refrigerate overnight.

Sprinkle some cocoa over the top and serve.

The next morning, after sprinkling with cocoa powder, I dotted some white chocolate hearts on the top for decoration :-)

Make Something Naughty to Eat


I've been looking forward to today's prompt, 'make something naughty to eat' , since the start of #JanuaryJoy.

I love ice cream, and as a child I used to love knickerbocker glories or banana splits. Yum!!


I try to steer clear of ice cream in the supermarkets as I'd end up buying a big tub, and demolishing it in minutes (yes, you read correctly!).

Today I've been really good at work, which makes a change! I'm normally wolfing cakes like there is no tomorrow. Yesterday I started off the day with a Twix bar and a cup of tea then throughout the day I ate 5 or 6 mini yum yums (with more tea!) and a bar of tablet. Then once home I had a massive bowl of ice cream with chocolate drops, butterscotch sprinkles and marshmallows which I ate whilst in the bath as per yesterday's prompt to have a home spa! (Our guests at the weekend left ice cream in the freezer and it would be rude not to eat it, right?!)

I'm going to have a very small bowl of ice cream once the kids are asleep and that will be my treat. 

It's pancake day soon (12th February) and I've ordered chocolate sauce and maple syrup in my supermarket order this week so that I'm sorted for making pancakes with the kids. I will try and save myself until then and limit the cake intake...

{January Joy - 2nd Jan}


The prompt from Florence Finds #JanuaryJoy for the 2nd is to 'have a dry week/month'.

In 2011, I started a healthy eating & fitness regimen with the help of a personal trainer and lost 3.5 stone. I gave up alcohol for 6 months, partly for the weight loss and I also couldn't really drink alcohol anyway at that time due to the antidepressants that I was taking (I did it once & was violently sick - not to be repeated!!).

Fast forward to 2013 and I do now drink occasionally but not often. When I do drink, I'm a complete lightweight!! There is also nothing worse than being hungover & in charge two demanding toddlers, so I tend to only have a drink when I don't have the children the following day (or work for that matter!),  which doesn't happen very often as my regular nights without the kiddies are 'school nights'.

So I've decided that a bigger challenge for me would be to have a week without sweets or chocolate (I am sat writing this at 7pm on New Year's Day and will be scheduling the post for the 2nd, whilst scoffing a packet of the kids chocolate biscuits and drinking a hot chocolate - Highlights, so that makes it ok, right?). For a while I was exercising 4-5 times a week and running frequently, which meant I could eat what I wanted and still maintain my weight. I've become lazy, am rarely exercising (twice a week max, typically once a week) but I'm continuing to stuff my face with sugar. I would go as far as saying I have an addiction!


Anyway, let's see how I manage without for the next week or so. (I doubt I'll manage it for more than a week as it's my birthday in the 14th and I'm reckoning there may be cake at my work!! Hint hint!!)
