{Meal Planning Monday}


Last week's meal plan was a success - hurrah! I followed the plan to the letter, except from one deviation where I had smoked salmon with salad on Tuesday instead of a salmon fillet. I was uber organised and my online food order arrived on the Tuesday, and I even made a chocolate cake on Tuesday night which I took into my work on Wednesday.

The whole chicken in the slow cooker was pretty good! I smothered it in butter, sprinkled it with dried parsley, sage and paprika and a dash of lemon juice and then threw it into the slow cooker on low for 9 hours (mine claimed to feed 4-6 people, so a large chicken - can't remember the weight of it). I put in in breast-side down:


It was maybe a little dry...but that could be because I over did it on the timings. We had it with roast potatoes, carrots, Yorkshire pudding and gravy - yum!!!

So here's this week's plan:

Monday (just me) - I had a big birthday lunch, so this evening after my run I had some toast

Tuesday (just me) - leftover sausage and lemon pasta from last week which I froze

Wednesday - pasta shapes / baked beans, cheese and toast

Thursday - macaroni cheese (the kids favourite) - does anyone have a slow cooker recipe that they could share??

Friday - chicken fried rice (using leftover cooked chicken from last week)

Saturday - salmon fillet, mashed potato and broccoli

Sunday (just me) - soup from the freezer
